Being the local Constantine Guru Allow me to shed a little bit of light....
The issues of Hellblazers in which Zatanna appeared are considered cannon with the Main universe of DC. That said... Yeah, John was a dick. He was dating Zee and Kat at the same time. The thing was Kat was almost exactly like Zee. Truth be told she was basically a carbon copy with one exception. Kat didn't want her powers. She didn't want to be open to magic, or anything like it, and that attracted John. It was a chance to be with someone who wanted to be normal. It's kind of like the forbidden fruit. Kat lived in a world of normality. A world were a man could love a woman, work, make a living, marry said woman, and have a family together. It's a world that John was never a part of and knew he really never could be a part of. He tried several times, but the Fallen, King of Vampires, and a bunch of other things caused it not to work.
When Zee left it was after John showed her how to wipe someone's memories. She wanted to know, and he showed her how to do it. He also explained that when it happened... anything she wanted with this person would be gone. There are some things that can't be forgiven.
Of course we know what happened with that huh?
The last time Zee was with John, actually with him, he said Kat's name instead of hers. That was the deal breaker. Every appearance after that was simply as her learning something, being there as a friend, or something similar until they removed her completely. (It was fun to watch her get stoned though.)
In the end the reason John and Zee didn't work is because A) John wasn't really able to decide on the kind of relationship he wanted, and B ) Zee thought that John could be something he wasn't.
